Biltong is a delightful South African snack that we couldn’t resist after our rugby-loving friends introduced us to its meaty goodness! Imagine this: tender strips of air-dried, cured meat that have been lovingly marinated in vinegar and spices, then hung out to dry like they’re enjoying a sunny day at the beach.
The word “biltong” comes from the Dutch words “bil,” meaning “buttock,” and “tong,” meaning “strip” or “tongue.” So, yes, it literally refers to strips of meat—no hidden meanings here! The process involves a flavourful bath of vinegar, black pepper, and coriander, along with a sprinkle of salt for good measure. Unlike its cousin beef jerky (which is cooked), biltong is air-dried without heat, resulting in a tender texture that’s more akin to a meat hug than a chew-fest.
