The word “biltong” comes from the Dutch words “bil,” meaning “buttock,” and “tong,” meaning “strip” or “tongue.” So, yes, it literally refers to strips of meat—no hidden meanings here! The process involves a flavourful bath of vinegar, black pepper, and coriander, along with a sprinkle of salt for good measure. Unlike its cousin beef jerky (which is cooked), biltong is air-dried without heat, resulting in a tender texture that’s more akin to a meat hug than a chew-fest.
