As the ‘new’ oranges, lemons and grapefruit come onto the local markets, I took the opportunity last week to pick up a few kilo’s of each and head to the kitchen to work on few few new recipes and some old ones. Take a look at the colours at two stages of the process (fruit cleaning and soaking the skins once they’ve been cut).
